PITTED PRUNES
Prunes (Dried Plums) are mechanically shaken off from the trees and dried under the sun. Pitted Prunes (no-pit) are classified by the machine used while pitting. There are two methods/machines, Ashlock and Elliot.
For both pitted and un-pitted prunes, the last step will be spraying with sorbic acid. This will preserve the end product and also make the skin shiny. Prunes are consumed as a snack, in cereal mixes, bakery and confectionery. Also it is widely used in cooking both sweet and savoury dishes.
